Citation: At approximately 0425 hrs. while standing in the bacon department I observed an employee load regular [redacted] bacon slabs on the first machine to be sliced and packaged and then go to the second slicer and then began loading certified organic Applegate bacon slabs (0245), to be sliced and packaged. The employee did not wash/or change his gloves or plastic sleeves, the employee was wearing a white frock that had signs of stains and moisture from the regular bacon slabs that were loaded on the first machine ,the employee failed to change his frock before handling the organic bacon slabs Additionally I observed at the first bacon slab slicer, the one employee had a cardboard box with a plastic inside of it setting on the scale ready to weigh sliced bacon, aside of the scale next to the outside of the box was a pile of exposed bacon slices. I immediately took regulatory control action by informing Mr. [redacted] and Ms. [redacted] of the non compliances. Ms. [redacted] took immediate corrective action by stopping production and recleaning and sanitizing all mentioned items in my presence Ms [redacted] also instructed the employee that was loading the slabs of bacon to change his gloves, sleeves, and frock, no further regulatory control action was needed. The plant is not meeting 9 CFR 416.4(d).

Regulation:

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
