Citation: At approximately 1035 hrs. while performing an O1C02, operational sanitation, I observed at the bologna stuffing table, employees stuffing 5 lb. rolls of turkey roll. At the stuffing tube under the table top a large gray lug was placed on the frame with water to hold the light tan casing being used for the stuffing of the turkey. The table top had holes in it and water was dripping from the table top into the gray lug. the table top had product from the turkey roll on it also. I observed an employee that was clipping the tan casing reach in the gray lug and pull out dark brown casings and clip them at the same area where the turkey casing were being clipped. I observed a pile of dark brown casings next to a pile of tan casing lying on the table that had water and turkey product on it. I asked Mr. [redacted] Lead person of the department what the dark brown casing were being used for, he informed me they will be used for beef chipping roll that would be stuffed at another table later. I informed Mr. [redacted] that they cannot co mingle the casing. Mr. [redacted] took immediate corrective action by discarding the dark brown casing that would be used later on the beef roll . No further regulatory control action was needed. The plant is not meeting 9 CFR 416.4(d). Past Similar NRs - Previous Ineffective Plant Actions: previous plant response was either ineffective or was not implemented NR: 32-2010 dated 9/7/2010 This document serves as a written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
