Citation: At approximately 01000 hrs. while standing in the bacon packing department, I observed an employee working at the area where the pack boxes of bacon are weighed and stacked ( Applegate Organic Sunday bacon with sell date 11/22/10.I observed the employee handle the boxes and touch the wooden pallet several times. The employee walked from the stacking area to the line where the exposed bacon was being staged for packaging ,the employee then started to touch the exposed product without changing her gloves or washing her hands. I immediately took regulatory control by informing Mr. [redacted] (Plant Management), of the non compliance. Mr. [redacted] stopped production and took immediate corrective action. Regulatory control was relinquished when sanitary condition were restored. The plant is not meeting 9 CFR 416.4(d). Past Similar NRs - Previous Ineffective Plant Actions: Plant further action was either ineffective or was not implemented NR: 32-2010 dated 9/7/2010 This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
