Citation: At approximately 0510 while performing a scheduled 01B02 procedure for preoperational sanitation, I observed the following noncompliance's. 1. In the Kettle room the large mixing paddle for kettle #5 had a piece of food particle on the arm of the paddle. This is a food contact surface. 2. Three of the dippers that is used to dip food out of the kettles. 1 had food particles on the inside of the dipper and on the outside of the dipper. 1 had grease on the inside of the dipper, and 1 had a water stain that had turned, an area of approximately 1 1/2 inches in size, black. These dippers are food contact. Mr. [redacted] was verbally notified of these noncompliance. No regulatory control was taken due to plant management immediately performing corrective action.


416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
