USDA Inspection Report: 29 Oct 2010

Code: 04B04
Violation: 317.1

Citation: At approximately 1220 hours I was touring the processing room when I noticed the following noncompliance: There were 3 stainless steel buggy's sitting in the walk area and 1 buggy was being placed on the dumper for the stuffing machine. I looked for labels on the buggies and found only 1 label to be attached to the plastic covering 1 of the buggies. I asked [redacted] where the labels were for the other 3 buggy's he said he did not know. [redacted] who is in charge of the Injection and Ham Stuff departments came into the area. [redacted] said when they make a batch they put one large plastic over the 4 buggies and only affixed 1 label. Mr. [redacted] immediately put a label on the 3 buggies without labels on them. I immediately ask for Ms. [redacted] HACCP Coordinator to come to the processing room. I explained the noncompliance to Ms. [redacted] Ms [redacted] explained to Mr. [redacted] that each buggy need to be separately labeled. Mr. [redacted] took immediate corrective action therefore no further regulatory action was needed. The plant is not following 9CFR 317.1
