Violation: 416.13(a), 416.4(a)

Citation: At approximately 0450 hrs. after the plants pre-operation sanitation and prior to the start of operations while performing a scheduled 01B02. I observed in the Bacon room on the belt where the bacon gets sliced, approximately 1/4 inch piece of bacon, from the previous days production. This is a direct food contact surface. I immediately notified Mr. [redacted] of the noncompliance. Also in the RTE room the inside of a SS tank that is used to hold cut and whole RTE product, had pieces of meat and grease from the previous days production. Also in the processing room the V-Mag machine had an area, where the hopper and machine connect, of approximately 3 inches in diameter that had product smeared on the inside of the machine. These pieces of equipment are direct food contact surfaces. I took immediately regulatory control and applied USDA Retain/Reject tags # B34802845 ( SS tank), and #B34802840 ( V- Mag machine). I informed Mr. [redacted] Supervisor of these noncompliance. When sanitary conditions were restored, regulatory control was relinquished. The plant is not meeting 9 CFR416.13(a) and 416.4(a).

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
