Citation: While performing a plant tour at approx 1300 hrs, Dr. [redacted] Dr. [redacted] and I (Dr. [redacted] observed 7 white plastic combos of thawing turkeys in the hallway. Six of the combos had approximately 75, 15 to 20 pound turkeys and one combo had about 15, 15 to 20 pound turkeys. The turkeys were being thawed in their immediate plastic packaging, a non-food contact surface. There was UFM present on the surface of the bags as well as in the water that the bags were immersed in for thawing. The bags had slits in them; thus, exposing product to potentially contaminated water. Regulatory control action was taken by tagging all 7 combos with the following regulatory control tags: B34802843, B11267165, B34802859, B34802852, B34802851, B34802847, and B34802857. Ms. [redacted] (HACCP Coordinator) was informed of the non-compliance. This non-compliance is in violation of 9CFR 416.13(b) and 416.4(d).

Regulation:

416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOPís at the frequencies specified.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
