Citation: At approximately 0430 I conducted a scheduled 01B02 procedure for pre-operational sanitation. This was performed after the plant conducted their inspection and before the start of operations. The following deviation was noted. The light shades in the wash area, approximately 8, have debris and water stains on the inside of the shade. Also the light shades in the cutting room, approximately 2, have water stains and debris on the inside of the shade. These lights are directly over product work areas. Mr. [redacted] cutting room supervisor, was verbally notified of this deviation. The plant is not compiling with regulation 9CFR 416.2(c).

Regulation:

416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.
