Citation: At 2300 hour while verifying sanitation performance standards, I observed the following noncompliance. In the Heat- Treated bacon room, there are several drops of condensation forming on the white pipe. The pipe goes from left to right across the room. The condensation on the pipe is directly above two tanks of bacon ready to cut. This is creating an insanitary condition. The department supervisor was verbally notified of the condensation. At 2310 I observed corrective action(s) taken by the supervisor. I did not see any condensation dripping at this time, no product was affected. At 2330 hour I verbally notified [redacted] shift supervisor of the noncompliance. This is failure of 9CFR 416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
