Citation: At 0510 Hr. while conducting the 01B02 procedure I observed in the Processing room 1 small stuffing horn with meat inside it. I had this horn removed from the department for cleaning. At 0515 hr. I observed in the same department the vemag at the linker with meat emulsion in the hopper, near the rim. I also found meat particles on the linker. I applied US Reject Tag No. B 30 829125 to the Vemag and US Reject Tag No. B 30 829127 to the Linker. At 0530 Hr. in the Pump room I observed 8 orange handled meat hooks stored with a rusty pliers inside the table with a shelf near, the door to the unloading dock. The meat hooks had either rust on them or meat particles adhered to the handles. I had them removed from the department for cleaning. I notified [redacted] of these non-compliances at 0535 Hr. At 0555 Hr. I reinspected the equipment (Vemag and Linker) in the processing room and these were found acceptable and I released this equipment for production. This is a violation of 9 CFR 416.13(c) and 416.4(a).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
