Citation: At approximately 0510 hrs,after management's pre operational procedures,before operations ,the following was observed in the grinding area, during a Pre-operational Inspection Procedure : 1-Two plastic spatula/paddles used for stirring products are observed with yellowish stains/ deposits on the handles and the flattened ends; also, the flattened ends, contact surfaces ,are scarred and frayed .Mr [redacted] was informed and immediately initiated corrective actions . 2-The corner table located at the entrance of the grinding area , used for cutting cheese, is observed with products residues on the contact surfaces .Management immediately initiated corrective actions, when informed . Miss [redacted], HACCP Coordinator, was informed of failure to comply with 9 CFR 416.4(a) and 416.13(c).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
