Citation: At approximately 0515, after establishments pre-operational inspection and before the start of operations, Dr. [redacted] and I observed the following non-compliances while performing Pre-operational Sanitation Inspection: In the ham room, hoses to tumbler had fraying plastic inside, screen/filter to boneless injector had meat and fat, table to boneless injector had white grease residue, shields to bone-in injector had fraying plastic and product debris from previous days use. In the smoke house area: parts to tipper tie had grease and product residue from previous days use, inlet feed to frankomatic linker had product residue that came off when scraped, tag numbers B30413666, B30413667, B30413668, B30829194, and B30829195, were applied. Informed Mr. [redacted] Sanitation Foreman and Mr. [redacted] of these issues. No documented deficiencies about these items were recorded in establishments SSOP records for Pre-operational Sanitation for this date. Regulations 416.4(a), 416.4(b) and 416.13(c) were not met.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
