Violation: 416.1, 416.4(b)

Citation: At approximately 0615 while touring the plant, I observed the following in the raw products cooler: Several containers of edible and non-edible casings that were being stored underneath the cooling unit, had unidentified black debris on the lids, approximately 1mm to 1cm in size, too numerous to count. Mr. [redacted] Supervisor was notified of this issue.  Immediate action was taken to correct the situation, no regulatory control action was necessary. This is a failure to meet the regulatory requirements of 416.4(b).

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
