Citation: At approximately 0530 hours, after establishments pre-operational inspection and before the start of operations, I observed the following non-compliances: In the Processing Area Cooler, there was rust on 2 plates to the grinder, tag #B30413662 applied, and food debris from previous days use, on disassembled equipment parts tag #30413661 applied.  Also, a metal detector in the same area had food debris and product buildup in several areas. Informed Mr. [redacted] Processing Supervisor. In Bacon Department, the bacon slicer had food debris and black grease on a rotating bar that is located above the product belt. Tag #B30413642 applied. Informed Mr. [redacted] QC and [redacted] Supervisor, of the issue. This is a failure to meet the regulatory requirements of 416.4(a), 416.4(b), and 416.13(c).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
