Citation: Today at approximately 1000 hours I performed an unscheduled 06D01, Sanitation Performance Standards procedure and observed the following non-compliances. " The slaughter floor has cracks (2), approximately 1 foot long and 1/2 inch deep, leading to the main floor drain. " The green door, that is located on the right hand side off of slaughter floor leading to storage areas and pens, is rusted through at and around the bottom and top door hinge creating holes on the door surface. " The door that leads directly into the holding pens has ceramic tiles on the wall and surrounding the door. On the right hand side of the door/walls, there are 2 broken/cracked ceramic tiles. " The detached outside storage area in front of Hide Room has accumulation of unused equipment and debris. " Inside storage area in upper section of facility (garage area) has accumulation of unused equipment and debris (dried leafs) on floor. I informed and showed Mr. [redacted] these non-compliances. I informed management that: Failure to meet regulatory requirements can lead to enforcement actions described in 9 CFR Part 500. 416.1 General rules. Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 416.2 Establishment grounds and facilities. (b) Construction. (1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. 416.4 Sanitary operations. (b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction.
