Citation: On Thursday 12/09/10 at approximately 0900 while performing a scheduled operational sanitation verification task (01C02) at establishment 09368 , I observed the following non food contact surface non-compliances on the slaughter floor. No product involved. 1) I observed a fan, that was not in use, hanging from the ceiling of the south east corner of the blood pit area that has cobwebs, and heavily build-up of the dust on the protective cover and on the fan blade itself. 2) While entering the carcass cooler, I noticed the inside of the cooler door had dried blood from the previous day's production from the bottom of the door approximately two feet up the door. 3) I noticed the overhead carcass rail above the gut station had a slight protein build-up starting to occur approximately three feet of the rail. 9CFR Regulation's state: 416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 416.4(b) Non-food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. I verbally notified [redacted] of the non-compliance's and this document serves as written notification that you're failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action." You are hereby advised of you're rights to appeal this decision as delineated by 306.5 and/or 381.35 of 9CFR

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
