Citation: At approximately 0605 while performing the scheduled 01B02, the following noncompliance was observed. After verifying that management had finished their pre operational sanitation checks, I started my check and found the steel table where evisceration occurs had a white fatty residue on it from a previous days slaughter. Mr. [redacted] was immediately notified about this verbally and in writing. The table was then cleaned, sanitized, re-inspected and passed before the start of slaughter operations. This is a noncompliance of regulations 416.13(c), each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's, 416.3(a), equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product, and 416.4(a), all food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. I then checked for similar NRs and found none. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action. Mr. [redacted] is also advised of his right to appeal this decision as delineated by 306.5 or 381.35 of 9 CFR.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
