Citation: At 0700 , I conducted a Sanitation Performance Standard task and noticed a deficiency in the room where the inedible barrels are stored.This room is adjacent to the slaughter room floor and employees need to go into this room to store the full inedible barrels in the cooler from the slaughter operations. No product is taken into this room other than inedible.

There were large pieces of cardboard under the conveyor belt assembly being stored in this room. There were various items littered throughout the floor consisting of paper, large rubber bands, empty plastic bags and cigarette butts by the overhead door leading to the outside. Other items that may either be stored in this room or that would be used are lying around or scattered about the floor. There is no food contact hazard attributed to this deficiency, but creates an insanitary condition within the area. 9 CFR 416.1 states: Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.[newline]9 CFR 416.2 (b)(2) states: Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.[newline] I notified of this deficiency and that this serves as wrritten documentation that failure to comply with regulatory requirements could result in additional regulatory and /or administrative action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
