Citation: While doing a Sanitation Performance Standards task at Est. 09368 at 0645, I noticed the following deficiencies within the plant. There are no food contact safety hazards associated with these deficiencies but they do contribute to creating an insanitary condition within the plant. 1. The hide puller on the kill floor has rust and flaking paint on the bottom frame that rests on the floor. Carcasses would not come in contact with this area. 2. The electrical light above the shipping scale is not working, making it less than acceptable in candlepower in that area where carcasses are weighed and shipped. The lights in the box /retail cooler are dirty and one of the lights is not working. 3. Along both sides of the overhead dock/loading door are cobwebs attached to the metal door frame and I-beam from the floor to the ceiling. Also,the white overhead door is dusty and has cobwebs along the sides. 9CFR 416.1 states: Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 9 CFR 416.2(c) states: Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets. I notified [redacted] and [redacted] of these deficiencies and that this serves as written notification that failure to comply with regulatory requirements could result in additional regulatory and/or administrative action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.
