Citation: After reviewing the establishments PIP log and finding ten items that have been on the list over thirty days, I proceeded perform an unscheduled 06D01 task on 08/26/2010 at approximately 1030 hours and found the following ten noncompliance; 1) Rust on the adjust bolts on the legs of the boning room tables. 2) Rubber seal needs replacing on compressor room door. 3) Freezer door handle, bolts, and hinges have rust and mineral build-up. 4) Electric box on wall behind stuffer has a rusted switch. 5) The electrical conduit tee by the ceiling behind the mixer grinder is rusted. 6) Bottom steel beam on loin cart in cooler is rusted. 7) Retail table in cooler clean off mineral build-up and rust. 8)Pipe cap on end of water pipe on entrance to slaughter floor from processing room on back outside wall. 9) Hide puller fat and protein build-up. 10) Cob webs by skylight over blood pit. No product was involved in this noncompliance. [redacted] 2nd was informed verbally and in writing by this noncompliance report. No similar NRs were found in the last sixty days. This is in violation of 9CFR416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary\ conditions and to ensure that product is not adulterated. 9CFR416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product. 416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
