Citation: At approximately 1300 hours July 21,2011,the following noncompliance was observed. On the slaughter floor there are cobwebs above the blood pit and around the light fixtures. This is a violation of the aforementioned regulation which states; "416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 416.4 Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product."Owner, Dave Froehlich II was in informed verbally and in writing with this document of the need for corrective action. A review of available plant records indicate no action had been taken on this noncompliance and a review of the noncompliance record show no recent noncompliance of this nature. No product was involved.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
