Citation: At approximately 0730 hours while performing a scheduled sanitation performance standard task the following noncompliance was observed. In the cooler, in the middle of the ceiling there appears to be an approximate one inch diameter hole. This is a violation of the afore mentioned regulation. No direct product contamination was observed. [redacted], was verbally informed of the violation and the need for corrective action. A check of available plant records indicate no action taken on the violation and a review of the noncompliance record show no recent noncompliance of this nature.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
