Citation: At approximately 1100 hours on 10/27/2010 while performing a 03G02 task the following noncompliance was found. As a result of an ongoing Food Safety Assessment a noncompliance was found in the monitoring of the chilling critical limit according to appendix B. The procedure in the establishments HACCP plan referred to [redacted] however there are two products produced without nitrite, liver pudding and rice pudding, these products have been monitored using the chilling time for nitrite products. This is in violation of 9CFR 417.2(3) List the critical limits that must be met at each of the critical control points. Critical limits shall, at a minimum, be designed to ensure that applicable targets or performance standards established by FSIS, and any other requirement set forth in this chapter pertaining to the specific process or product, are met. And 9CFR 417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits. After completing the 03G02 task it was determined by the records that the product had met the critical limits by temperature and time for products without nitrite and that no product adulteration had occurred. [redacted] 2nd was informed of this noncompliance verbally and in writing with this NR. Immediate action was taken by [redacted] 2nd and the proper chilling for product without nitrite according to appendix B was added to his HACCP Fully Cooked Not Shelf Stable program and a new log was created for recording the chilling of product without nitrite. No similar NRs were found.
