Citation: On Thursday 07/14/2011, while performing pre-operational sanitation inspection at approximately 0730, the following was observed: Immediately to the left after entering the inedible room from the slaughter area, there is a shelf on the wall. This shelf has stored on it what appears to be numerous and excessive items no longer being used. The shelf is cluttered and disorgainized. Directly below the shelf on the floor is a rodent bait box. The area on the floor and surrounding the bait box has some type of residue build up on around it. I notified [redacted] of this observation. No product was involved and no regulatory control action was taken. This does not comply with regulation 416.1; 416.4(b).

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
