Citation: On Thursday 09/29/2011 at approximately 0730, the following was observed on the slaughter floor: A section of the wall directly behind the head inspection rack has several small holes and cracks in the wall covering. It appears there is some type of residue build up in the small holes and cracks. I notified [redacted] of this observeration. No product was involved and no regulatory control action was taken. This does not comply with regulation 416.2(b)(2); 416.1. [redacted] stated that he expects corrective action to be completed prior to the next slaughter (scheduled for 10/06/2011).


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
