Citation: During the performance of a comprehensive food safety assessment which began on 12/08/2011 at Est. 09373, the following was observed; there was a green substance which appears mildew-like on the condensaste pipes under the cooling units in the chill cooler. There was a white substance present on the side of the green curtain between the carcass chill cooler and the carcass holding cooler which does not come in contact with the carcasses. Several areas of the overhead rails are showing rust beginning to form under the lubricant that has been applied to the rails. Mr. Randy Peachey, owner of Est. 09373, was notified. This does not meet the requirements of 9 CFR 416.1 and 416.2(b)(2).


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
