Citation: On Tuesday 09/28/2010, at approximately 1415, the following was observed in the RTE cooler. Two lights on the ceiling had moisture and water on the inside of the protective covering. No dripping of water was observed and the moisture and water was being contained inside the protective coverings. Doug Stover (owner) was informed of this and product was immediately moved to assure no product contamination could occur. No regulatory control action was taken. This does not comply with regulation 416.2(b)(1); 416.2(c). This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.


416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.
