Citation: On Friday 01/28/2011, at approximately 0915, the following was observed in the furnace/restroom area. The floor area beside and around the furnace and below the storage shelf along the wall has an excessive build up of a dark and/or black residue substance. There are also small peices of debris, dirt, dust and other unknown particles of debris around the edges of the floor/wall juncture. These conditions are also present in the adjoining restroom area. I notified [redacted] of these observations. No product was involved and no regulatory control action was taken. This does not comply with regulation 416.2(b)(2); 416.4(b). This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
