Citation: On Wednesday 06/15/2011, while performing pre-operational sanitation inspection in the slaughter areas at approximately 0730 and after plant personnel verbally informed the plants pre-operational sanitation inspection for today was completed, the following was observed: The plastic lug which is used to store head/cheek meat during the slaughter operations was observed to have numerous knife marks and grooves in areas of the container on both the inside and outside of the container. No product was involved and no regulatory control action was taken. I informed [redacted] of this observation. This container was replaced with an acceptable container. This does not comply with regualtion 416.4(a); 416.1


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
