Citation: On Wedesday 10/05/2011, at approximately 0730 while performing pre-operational sanitation, the following was observed in the small cooler next to the slaughter floor: The small rack immediately inside the door and located along the right side wall has a greasy residue build up on the underside of the frame work and over a portion of the legs to the rack. No product was involved and no regulatory control action was taken. I notified [redacted] of this observation. This does not comply with regulation 416.1; 416.4(b). This document serves as written notification that your failure to comply with regulations could result in additional regulatory or administrative action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
