Citation: On this date at 0730 am while dewing 01B02 task I walking through the back cooler their was several line of black liquid coming from the entrance of the ceiling down the wall on the front part of the coolers and there was a molding came loose for a small part because a nail fell out leaving a hole. I reporting this observation to Miss. [redacted] whole said she would fix both the probing. There was no product near the non-compliance problems. The non-compliances violates Regulatory Requirements 416.4(b) which states "Non food contract surfaces of facilities equipments, and utensils used in the operation of the est. must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulterations of product". its also violates the Plant SSOP on page 4 F which states . This document serves as written notification that continued failure to comply with regulatory requirements could result in additional regulatory or administrative action`s described in 9 CFR 500.4.

Regulation:

416.14 Each official establishment shall routinely evaluate the effectiveness of the Sanitation SOPís and the procedures therein in preventing direct contamination or adulteration of product(s) and shall revise both as necessary to keep them effective and current with respect to changes in facilities, equipment, utensils, operations, or personnel.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
