Violation: 416.1, 416.2(b)(1), 416.2(b)(2), 416.4(b)

Citation: On this day Wednesday August 25, 2010 at approx. 0800 I observed the following 06D01 non-compliance. 1. The floor wall junction leading from the swinging door in the processing area to the kill floor, around to the walk in freezer has a buildup of what appears to be dirt, dust and debris. 2. The door jam on the door entering the slaughter floor has what appears to be surface rust forming on both sides of the door jam from the floor wall junction up approximately 12 to 16 inches and there are also five or six 1 to 2 inch spots through out the jam. 3. The concrete block wall above the knocking pen door and across to the left too the inedible room door, above the glazed tile has peeling white paint in numerous places. 4. In the processing area around the grinder area the shelf to the left of the grinder has several spots of peeling white paint and a collection of what appears to be seasoning (salt and pepper) and dust. 5. In the processing area around the grinder area there are three power supply boxes, one to the left of the grinder and two on the next wall in the saw area that have peeling white paint and a collection of what appears to be product residue on top of them, also in this same area there is a piece of metal conduit that has peeling white paint and several spots of rust throughout the four to five foot piece. This is in violation of 416.1, 416.2(b)(1), 416.2(b)(2) and 416.4(b) of the Sanitation Performance Standards Regulations. I informed the Production Supervisor verbally and in writing with this Noncompliance Report.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
