Citation: On Wednesday, March 7, 2012 at approx. 0800 hours during the performance of a Pre-op SSOP Inspection Task observed the following noncompliances after the completion of the Establishments monitoring of Pre-operational Sanitation and prior to the start of production operations in the Slaughter Department. On this day the [redacted]. 1) At the entrance along the wall to the left and right side observed product residue (meat/fat) on several small stainless steel S-hooks and one stainless steel multi-hook tree from previous day production. 2) Directly above the boning table observed product residue (meat/fat) splattered throughout the surface areas on the large splitting saw from previous production day. 3) Along the wall behind the cutting table observed a stainless steel bucket containing water and floating particles of product residue (meat/fat) from previous day production. 4) Observed a dark dust formation along wall ledge above the tile block near the entrance way. Notified [redacted] Production Supervisor verbally and in writing of the noncompliances. Establishment had implemented immediate corrective actions, no further regulatory actions had been required. A review of the Establishments SSOP Form under the heading of Pre-op Processing, dated Wednesday, 3/07/12, indicated that the results of the Establishments Monitoring of Pre-operational Sanitation were acceptable prior to these findings of noncompliance.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.


416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
