Citation: On Wednesday, January 11, 2012 at approx. 0930 hours, observed the following noncompliances with Sanitation Performance Standards – Construction and Sanitary Operations – non food contact surfaces.. 1) Two doorways leading from Shipping/Receiving Dock area to the Shipping Staging area, observed the appearance of rust on the overhead framing of both doorways. 2) Shipping Staging area, observed build-up of floor debris and pieces of wood behind the curbs near the far outside wall by the storage of wooden pallets and load locks. 3) Combo cooler, observed a dark film residue build-up on the overhead refrigeration unit evaporators fan guards (4). Informed Plant Production Supervisor of the noncompliance’s both verbally and in writing with this Noncompliance Record.


416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
