Citation: On July 29, 2010, at approximately 0540 hours, while performing 01B02, Pre-operational sanitation on the dressing floor area of the establishment, I observed a number of scissors and knives with blood, fat, and fecal/ingesta contamination on them from the previous day's operations. These items were located in the knife box just outside the offal area, and were the utensils used by the offal employees. There were 3 pair of scissors which had tripe particles on them only noticeable when opened. There were also 3-4 knives which had fat, fecal/ingesta, and blood particles located in the employee numbers, engraved into the handles, as well as where the handle and blade meet. This knife box was tagged using U.S. Rejected/Retained tag #B39862291. QA employees [redacted] and [redacted] were notified of this non-compliance. All rejected equipment was cleaned and presented for re-inspection and was passed for use. There was no indication this non-compliance was identified by the establishment. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action. Regulation:

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
