Citation: On August 13, 2010 at approximately 1305 hours while performing 03J02 HACCP Slaughter Verification Procedure I observed carcass #131024-1 with fecal/ingesta contamination. The contamination was located on the brisket, covering an area approximately 14" x 2". In this area were plant like fibrous particles, green/brown in color, ranging in size from 1" to one centimeter in length. The production line was stopped and [redacted] was shown the contamination and informed of the non-compliance. Production was then allowed to continue while the carcass was sent to the side rail where the contamination was removed. When trimmed the carcass was presented for re-inspection and released. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
