Citation: On September 27, 2010 at approximately 1010 hours, while performing inspection duties on the final rail, I noticed condensation falling from the header chain where the "dogs" that push the carcasses are located. Production was stopped as I witnessed the condensation hitting product. Line leader [redacted] was notified of the noncompliance. Plant employees wiped down the rail and turned on the blower for that chain to remove all condensation as an immediate corrective action. The affected product was trimmed and passed by USDA inspection, and the production line was allowed to continue when all condensation was removed. There was no indication this noncompliance was identified by the establishment. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.


416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
