Citation: As a result of a recent Food Safety Assessment conducted at establishment 09400-M during the time frame of August 25th through November 17th 2010, the following noncompliance was discovered: The document presented to support their procedures and frequencies of monitoring was a letter from the Corporate Director of Regulatory Affairs titled, "Verification: Decision Making Documents." It discussed frequency of verification activities for thermometer calibration, records review and verification of direct observations of the monitoring activities. The establishment did not provide appropriate documents that support the monitoring procedures and frequencies in the Raw Not Ground HACCP plan for offal and trim as required by 9 CFR 417.5 (a) 2. Mr. [redacted] Regulatory Supervisor, was notified of the noncompliance. 9 CFR 417.5 (a) 2 states in part "The written HACCP plan, including decision making documents associated with the selection and development of CCP's and critical limits, and documents supporting both the monitoring and verification procedures selected and the frequency of those procedures." This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.
