Citation: On November 18, 2010 at approximately 0540 hours while performing procedure code 01B02 Pre-Operational Sanitation Inspection after the establishment's preoperational sanitation procedures were completed, I observed the following noncompliance in the dressing floor department. The tail conveyor chute (at the end of the conveyor where the tails drop down to the trim table) with a build up of blood and fat from the previous days production. This blood and fat covered an area approximately six inches wide and approximately three feet long on both sides, which was approximately 75 % of the sides of this attached tail chute. A U. S. Reject tag # B19482511 was attached to the tail conveyor. There was no indication that this noncompliance was identified by the establishment. The affected tail chute was cleaned and sanitized prior to the start of operations. No product was affected since this was found on pre-operational sanitation.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
