Citation: On November 19, 2010 at approximately 0553 hours while performing procedure code 01B02 Pre-Operational Sanitation Inspection after the establishment's pre-operational sanitation procedures were completed, I observed the following noncompliance in the Map Blend Grind Department. The #1 Coarse Grinder with a build up of fat and meat particles completely covering the underside of the support bar in the grinder hopper. This build up measuring approximately 1 1/2 inch by 18 inches. I also noted that the stainless steel extended hopper with a build up between the grinder hopper and this stainless steel hopper. This build up was approximately 1/4 inch wide and completely circumferencing the grinder hopper. No regulatory control action was taken since the Plant Sanitation Supervisor took immediate steps to correct this noncompliance. There was no indication that this noncompliance was identified by the establishment. The affected #1 Coarse grinder and Stainless steel extended hopper was cleaned and sanitized prior to the start of operations. No product was affected since this was found on pre-operational sanitation.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
