Citation: On 2/17/11 at approximately 22:10 hours while performing the review and observation component of ISP task 03C02 in the beef processing room, a deviation was found for CCP 1 [redacted] On the neck area I found a fecal/ingesta smear approximately 1/2 by 1/4 inch that was greenish brown in color with some plant like fibrous strands. Also found along the neck bone in the same area there was fecal/ingesta consisting of a 1/4 by 1 3/4 inch strip, 1/4 by 1/2 inch strip, a 3/4 inch blade of hay/grass, and scattered pieces of what appears to be digested hay/grass in the approximate 3 by 4 inch total area. The material is plant like and fibrous. Production was stopped and the entire beef chuck was removed from production. I then notified QA Supervisor Mr. [redacted] of the non-compliance where Mr. [redacted] immediately began corrective actions. 9CFR 417.2(c) states: List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits. Continued failure to comply with this regulatory requirement could result in further regulatory or administrative action.
