Citation: On February 18, 2011 at approximately 0540 hours while performing procedure code 01B02 Pre-Operational Sanitation Inspection after the establishment's preoperational sanitation procedures were completed, I observed the following noncompliances in the harvest floor department. The tail conveyor chute (at the end of the conveyor where the tails drop down to the trim table) with a build up of meat and fat from the previous days production. This build up was approximately 7 inches in length, 1 inch wide and approximately 3/4 of an inch thick at the top of the chute immediately under where the conveyor meets this chute. I also observed in the head boning room by the jaw breaker that the end of drip pan for the return head and tongue hook line with a build up of a black slimy foreign substance. This build up was at the bottom of the angled part where the drain hose is attached covering an area approximately 1 1/2 inch wide and approximately 12 inches in length. No regulatory control action was taken since the plant sanitation department took immediate steps to correct these noncompliances. There was no indication that these noncompliances were identified by the establishment. The affected areas were cleaned and sanitized prior to the start of operations. No product was affected since these noncompliances were found on pre-operational sanitation.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
