Citation: On February 23, 2011 at approximately 1000 hours, I observed condensation on the moving chain at the final rail. The condensation was located on the brackets of the "dogs" used to push along the carcasses. The condensation was seen falling from the brackets that are directly over the carcasses, but direct product contact was not witnessed. At this point the line was stopped and the issue was shown to [redacted] line leader for this area. The line was run out with no additional carcasses placed on it until the issue was corrected. The plant turned on a blower that had been off and wiped down the affected areas. When the condensation issue was corrected production was allowed to continue. There was no indication that this noncompliance was identified by the establishment. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
