Citation: On March 2, 2011 at approximately 0550 hours while performing procedure code 01B02 Pre-Operational Sanitation Inspection after the establishment's pre-operational sanitation procedures were completed, I observed the following noncompliances in the bulk grind department. The Weiler Final Grinder for the map room with a build of a brownish foreign material on the white rubber seals around both ends of the mixer arm. These seals are approximately 8 inches in diameter and 3/4 of in inch thick and was completely covered by this brownish foreign substance. I also noted that the 6000 lb blender discharge auger with meat and fat particles on the last two turns of the worm at the top of this auger. These meat and fat particles were too numerous to count and they completely covered the top two fins on this worm auger. A U. S. Reject tag # A8065632 was applied to this 6000 lb blender discharge auger. There was no indication that these noncompliances were identified by the establishment. The affected areas were cleaned and sanitized prior to the start of operations. No product was affected since these noncompliances were found on pre-operational sanitation.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
