Citation: On 5/21/11 at approximately 1600 hours while performing the ISP task 06D01 I observed flaking paint on almost the entire ceiling in the room where cleaned knives are stored after production. This room is where the old restrooms used to be and is located on the left as you travel between the rear map room door and the main cooler door. Also observed in this room is what appears to be a buildup of a brown material in the plastic protective covering over the ceiling light. I notified QA 2nd Shift Supervisor Mr. [redacted] of the non-compliance. 9CFR 416.2(b)(1) states: Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. Continued failure to comply with this regulatory requirement could result in further regulatory or administrative action.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
