Citation: On 7/13/2011 at approximately 2300 hours I performed the ISP task 01C02 in the combo bin coolers. The establishment has procedures in place to cap the combo bins with a plastic sheet that is taped around the top of the bins thereby protecting the product from physical hazards that occur during operations when the pallets and bins are being loaded and unloaded from the storage cooler throughout the day. As I performed the ISP task for this area I observed 4 bins of fresh beef trim and 4 bins of frozen FRB trim for a total of 8 bins that were not properly capped, leaving the product exposed and unprotected from physical hazards. 9CFR 416.4(d) states: Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments. I notified QA Supervisor Mr. [redacted] about the non-compliance. The bins were inspected and found to be free of any contaminants. No U.S. Reject/Retain Tags were needed. An establishment employee was instructed to cover the product. Continued failure to comply with this regulatory requirement could result in further regulatory or administrative action.
