Citation: On 11/26/11 at approximately 22:30 hours I performed inspection for the requirements for the Sanitation Performance Standards (SPS) in the beef boning and processing room where I observed the following conditions: 1.) There was a buildup or a growth of a green substance that is moss like in appearance on the pipe labeled “nitrogen” that is located on the left wall as you enter from the grinding room and is directly behind where the chuck line begins. 2.) There is a buildup of a green material on the right wall as you enter from the grinding room and is located near where the beef round processing line ends next to the beam. 3.) There is a heavy buildup of dust on the exhaust fan and the wall near it that is located just as you enter from the grinding room near where the QA desk is located. 4.) On the light above the meat washing sink that is located next to where the advanced meat recovery product combo bins are filled there is a very heavy buildup of what appears to be dried meat and fat pieces and particles on its back surface. I notified QA person Mr. [redacted] about the non-compliances where he was then shown each of these observations. Continued failure to comply with the requirements of 9CFR 416.(2)(b)(2), 416.4(b), and 416.1 could result in further regulatory or administrative action


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
