Citation: On January 10th 2011 at approximately 1545 hours while performing a HACCP Slaughter Verification Procedure / Zero Tolerance, I observed a carcass with fecal / ingesta contamination present on the hind quarter. The carcass had green/brown particles and 1/4" pieces of fecal located in three different locations. Upon observation of this non compliance, the production line was stopped and all visible contamination was removed by adjacent trimmer. production resumed after the carcass was trimmed and reinspected. [redacted] and [redacted] dressing floor line leaders, were shown the contamination and notified of this non compliance.

Regulation:

310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
