Citation: On March 8th 2012 at approximately 1515 hours while performing the Beef Sanitary Dressing task, I observed a yellow bin used for collecting retained carcass tails. Inside the bin there were 5 tails. The first two tails I observed had green/brown particles located at several locations. The two tails I observed had cattle ID tags attached to them. At the bottom of the bin there were three more tails which did not have cattle ID tags attached to them. I was unable to locate any contamination on these three tails. At this time, I showed [redacted] the contamination on the two tails and informed her of this non complience. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
