Citation: At approximately 1330 hours on April 18th 2012, I was conducting an observation of the coolers with inspector [redacted] During the observation, inspector [redacted] discovered a carcass contaminated with grease. The grease was located on the hock. The grease was 1" x 5" in diameter. A switch pole was hung directly on the carcass which also was covered in grease. At this time I notified QA [redacted] of this noncompliance. Mr. [redacted] notified plant management. Corrective action was taken immediately by plant / cooler personnel. The switch pole was removed and the carcass was trimmed by cooler personnel. The carcass was reinspected and released. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
